Instructions

Banana muffins

  • Pre-heat your oven to 170C (fan) and line a 12-hole muffin tray with cases (unless you are using silicone muffin moulds). While pre-heating, mash the bananas in a bowl using a fork until broken down, then mix in the eggs, vanilla extract, date syrup, Arla LactoFREE Natural Yogurt, Arla LactoFREE Spreadable, Arla LactoFREE Semi-Skimmed Milk Drink and red food colouring.
  • In a separate bowl, mix together the wholemeal flour, cocoa powder and bicarbonate of soda, then, using a spatula, fold the dry ingredients into the banana mix until just combined.
  • Divide the mix across the muffin tray and bake in the oven for 15-20 minutes until risen and cooked – a cocktail stick should come out clean when inserted in the centre of a muffin.
  • Leave the muffins to cool for 5-10 minutes in the tin before transferring to a cooling rack to cool completely.

Frosting

  • Add the Arla LactoFREE Soft Cheese, Arla LactoFREE Natural Yogurt, Arla LactoFREE Cream, caster sugar and vanilla extract to a bowl and beat with an electric mixer until smooth, thick and lump-free, about 5 minutes.
  • To frost, remove the muffins from their cases. Slice across the middle and pipe a small amount of frosting on the bottom half. Add the top half and pipe another swirl of frosting to finish.
