It’s a satisfying breakfast staple, and a great start to every morning.

Ingredients

Blueberry compote

150 g Frozen blueberries
25 ml Orange juice
1 Lemon, zested and juiced
2 tbsp Maple syrup

Yogurt bowl

4 tbsp Granola
50 g Pistachios

Instructions

Blueberry compote

  • Place the blueberries, orange juice, lemon juice and maple syrup in a saucepan over a medium-high heat and bring to a simmer.
  • Once simmering, turn the heat down and continue to cook until some of the blueberries have broken down and the compote is at your preferred consistency, about 5-10 minutes.
  • Take off the heat and leave to cool (the compote will thicken as it cools).

Yogurt bowl

  • Divide the yogurt between two bowls. Gently swirl half the blueberry compote into each bowl and top with the granola, pistachios and lemon zest. For a little extra sweetness, just drizzle over a little more maple syrup.
