2 Bananas, peeled and sliced
7 Medjool dates, de- stoned and chopped
1 tsp Cinnamon
1 tbsp Honey, plus extra for drizzling

Instructions

Banoffee sauce

  • Add the butter to a frying pan over a medium-high heat. Slice your bananas and chop your dates while waiting for the butter to heat.
  • Once the butter is foaming, add the banana and dates and cook for about 3 minutes until the bananas start to break down.
  • Add in the cinnamon and honey and cook for a further 2 minutes until the bananas and dates are all combined and beginning to caramelise. Transfer the mixture to a bowl and leave to cool.

Parfait

  • Once the banoffee mixture is cool, prepare your parfaits by taking two glasses or mason jars and adding 1-2 tbsp of the mixture to each. Sprinkle over 1 tbsp granola each, then using half the Greek yogurt, add equal amounts to each glass.
  • Add a second layer of each to the glasses, starting with the rest of the banoffee mixture, followed by 1 tbsp of granola and the rest of the Greek yogurt.
  • Serve straight away by topping the parfaits with a final sprinkle of granola, a drizzle of honey and a pinch of salt.
