Instructions

  • Peel the carrots and cut them into pieces. Cut courgette and pepper into evenly sized pieces. Peel and quarter the red onion. Mix everything in a bowl with the butter & rapeseed oil, salt, and freshly ground black pepper.
  • Place the vegetables in the air fryer basket in an even layer. Cook at 200 °C for about 15 minutes, shaking or stirring halfway through.
  • Scatter the drained white cheese over the vegetables. Cook for a further 5 minutes.
  • Top the vegetables with basil and serve straight away.
