4 Wholemeal tortillas

Instructions

Kebab

  • Combine beef and spices to a smooth, even mixture. Add chia seeds and mix well.
  • Place two sheets of baking paper on the work surface and divide half of the meat on each. Place another sheet of baking paper on top and roll the meat out thinly, using a rolling pin or similar.
  • Remove the top sheet of baking paper and roll the papers with the meat into tight rolls.
  • Place the rolls in a small roasting tin and bake in the oven at 200 °C (fan-assisted oven) for about 25 minutes.

Dressing

  • Blend cottage cheese, butter beans, and parsley until smooth using a hand blender.
  • Season the dressing with salt and pepper.

To serve

  • Unroll the meat from the parchment, warm the tortillas, and fill them with kebab, vegetables, and dressing.
