Aubergine Gratin

This is a vegetarian version of Greek Moussaka. Tastes delicious!


Step 1
  • Cut the aubergines into 1 cm thick slices and place them on a paper towel. Sprinkle salt over.
Step 2
  • Let the butter melt overheat in a saucepan, without burning. Sweat onions and garlic for approximately 1 minute,
Step 3
  • Add tomatoes, tomato paste and stock cube. Let the sauce boil approximately 5 minutes. Let the rest of the butter become golden in frying a pan.
Step 4
  • Dry the aubergine slices and fry them approximately 1 minute on each side. Spread the tomato sauce and aubergine slices in an ovenproof dish.
Step 5
  • Pour pasta sauce and grated cheese over. Bake the aubergine Moussaka at the bottom of the oven for ½ hour at 225 °.
