50 ml Sweet chilli sauce
50 ml Soy sauce

To serve

Crisp salads made with, for example, cabbage, carrot, and spring onion

Spring rolls

  • Heat a sauté pan well and add oil and curry powder. Sauté onion, garlic, and ginger for about 2 minutes over medium heat.
  • Add mushrooms and soy sauce, and fry over high heat for 5–10 minutes until the mushrooms are dry.
  • Add cabbage and fish sauce and cook over medium heat for about 10 minutes, or until the cabbage has wilted.
  • Stir in the spring onions and red pepper for the last few minutes. Season to taste.

How to assemble the spring rolls

  • Unwrap the spring roll pastry and keep it covered with a damp tea towel. Take out one sheet at a time and place it with one corner pointing towards you.
