Saffron Cake

Saffron cake - the Småland cheese cake has taken inspiration from Gotland's saffron pancake.

Ingredients

30 g Chopped almonds
3 Eggs
40 g Caster sugar
1 pinch Salt
g Saffron
30 g Wheat flour
500 g Cottage cheese
200 ml Semi-skimmed milk
200 g Berries E.g. Blackberries
250 ml Bechamel sauce

Instructions

Step 1

  • Heat the oven to 175 °.

Step 2

  • Whisk the eggs and sugar together. Stir in the salt, saffron, flour, cottage cheese, chopped almonds and milk.

Step 3

  • Pour the mixture into a greased ovenproof dish. Bake in the middle of the oven for about 50 minutes.
