Lemon biscuits

1 h
A delightful little treat for calm coffee breaks as well as special occasions. Flavoured with both lemon juice and zest, these lemon biscuits have the most irresistible combination of tangy and sweet flavours, everything you are looking for in classic, buttery biscuits like these. They require only a few basic ingredients, making them ideal for a quick craving.

  • Preheat the oven to 200°C (conventional oven).
  • Wash the lemon thoroughly.
  • Mix flour, icing sugar, vanilla sugar, and salt in a mixing bowl.
  • Finely grate the outer yellow zest of the lemon into the bowl. Add 1 tbsp freshly squeezed lemon juice, egg yolk, and butter. Quickly mix to form a dough. Be careful not to overmix.
  • Remove the dough from the bowl and shape it into two ropes. Cut each rope into 16 pieces.
  • Roll into balls and place them on two baking trays lined with baking paper. Gently press the biscuits down with a fork.
  • Bake in the middle of the oven for 12-15 minutes. Let the biscuits cool on the tray.

If you feel like your biscuits always get flat and spread out in the oven, consider some chilling time in the fridge. Chill the dough balls in the fridge for about 15 minutes before baking. This solidifies the butter, meaning less spreading when they bake.

The biscuits keep well in an airtight container at room temperature for up to 1 week. If you prefer them crisp, keep them out of the fridge.

Add your own touch

Consider making a sumptuous lemon cream cheese filling for the biscuits to add a special touch. Mix 1 tbsp cream cheese, 1 tbsp lemon curd, and 1 tbsp icing sugar gently with a fork until you have a mayonnaise-like texture. It quickly becomes runny, so be careful not to overmix. Just before serving, put 1 tbsp of the filling on a biscuit and top with another one. Voilà, easy, filled lemon biscuits.
