Whole Grain Muffins

Delicious buns that are great for breakfast, brunch, packed lunch, birthday, afternoon coffee or whenever you just fancy one!

Ingredients

50 g Butter
400 ml Milk
100 ml Pouring yoghurt
50 g Yeast
2 tsp Sugar
2 tsp Coarse salt
300 g Wholemeal flour
450 g Wheat flour
1 Whipped egg

Instructions

Step 1

  • Melt the butter in a pan and add the milk. Pour the mixture into a bowl and add the pouring yogurt. Stir in the yeast. Add the remaining ingredients (keep some of the wheat flour back). Mix the dough well.

Step 2

  • Cover the bowl with a lid and place the dough for proving in a warm place for approximately 1 hour. Take the dough out and place on a floured table and knead it thoroughly.

Step 3

  • Shape the dough into 24 buns and leave them on a baking sheet for about ½ hour. Brush the buns with eggs and place them in the middle of the oven.

Step 4

  • Serve the muffins for brunch along with two kinds of cheese or with poached eggs, toasted bacon, fried tomatoes and roasted mushrooms.

Baking Time

  • 20 minutes at 225 °

Top Tip

If you use whole wheat flour with grains - use a smaller amount.
