Hidden Veg Sausage Rolls

Sneak veg into your little one's diet in the most delicious way with our easy homemade sausage roll recipe!

Ingredients

250 g Sausage meat (Skin removed)
1 tbsp Dijon mustard
50 g Golden breadcrumbs
1 Courgette (Grated)
2 Carrots (Grated)
2 tbsp (Caramelised onion) Onion Chutney
375 g Puff pastry
1 Large egg

Instructions

Step 1

  • Pre-heat your oven to gas 6, 200°C, fan 180°C.

Step 2

  • Mix all ingredients except the pastry, milk and egg in a large bowl, then season. In a smaller bowl, beat the egg and Big Milk together to create the egg wash, then set aside.

Step 3

  • Roll out your pastry into a 70x20cm rectangle, then pour your filling in a sausage shape down the centre.

Step 4

  • Brush the exposed pastry with egg wash, then pull one side of the pastry over to meet the other. Keep the pastry tight around the filling, and press the edges together with a fork.

Step 5

  • Brush the whole roll with the rest of the egg wash and leave to dry for 5 mins. Brush with egg wash again, then cut into 10cm pieces.

Step 6

  • Season with salt and pepper and bake on a lined tray for 30 mins. Leave to cool, then enjoy with the kids!
