Thick Fruity Pancakes

Thick Fruity Pancakes

Our variation of thick pancakes! We recommend you use fresh blueberries!

Ingredients

Pancake Batter

Semi-skimmed milk
800 ml
Semolina
150 g
Salt
tsp
Beaten eggs
2
Caster sugar
2 tbsp
Lemon
Ripped Peel Of 1
Icing sugar
2 tbsp

Vanilla Blueberry

Vanilla whipped cream
250 ml
Blueberries
300 g

Instructions

Step 1

  • Heat the oven to 200 °. Grease an ovenproof dish, about 22 cm in diameter.

Step 2

  • Boil the milk in a saucepan. Remove the pan from the heat. Mix the semolina and salt and add to the milk then boil on a low heat for about 4 minutes. Remove the pan from the heat again.

Step 3

  • Stir in eggs, sugar and lemon peel. Pour the mixture into the ovenproof dish and bake in the lower part of the oven for about 35 minutes.

Step 4

  • Allow to cool and sprinkle over the icing sugar. Whisk the vanilla cream and mix with blueberries, saving some for garnish.

Step 5

  • Serve the thick pancakes lukewarm with vanilla blueberries.
