A classic, this homemade strawberry almond cake features a moist almond base, a light vanilla whipped cream frosting and sweet strawberries on top. Although the cake looks impressive, it is very easy to bake, and you will never get tired of eating this good old-fashioned strawberry almond cake. You can bake the almond base and make the vanilla cream frosting the day before – so you only need to assemble it and decorate with fresh strawberries, making an easy, beautiful, delicious cake that will impress your guests.

Almond cake
  • Preheat the oven to 175°C (regular oven).
  • Beat eggs, sugar, and salt until light and fluffy.
  • Fold in finely chopped almonds.
  • Clamp a piece of baking paper firmly between the ring and the bottom of a springform pan (approx. 22 cm in diameter). Grease the sides.
  • Spread the batter evenly in the springform pan and bake it for about 35 minutes. Let it cool completely in the pan on a baking rack.
  • Remove the ring and turn the cake directly onto a serving plate with the bottom up – pull off the baking paper.
Vanilla whipped cream frosting
  • Slice down the centre of the vanilla pod, scrape out the vanilla seeds and mix with icing sugar to separate the seeds.
  • Put the vanilla and icing sugar mixture in a bowl with crème fraiche and double cream. Beat the mixture to a firm foam.
  • Spread the vanilla cream frosting onto the cooled almond base.
  • Place strawberries on top and decorate the strawberry almond cake with fresh mint leaves.

Save time and prepare the strawberry almond cake well in advance. Make the almond cake base and vanilla whipped cream frosting the day before, spread the frosting on the cake and cover it before placing it in the fridge until the next day. It will only make the cake better to let the frosting and cake base set. Add strawberries and decorate the cake with mint leaves just before serving.

Make sure you do not overmix the whipped cream frosting, or it will lose its shape and structure and get grainy. Whisk the mixture at medium speed, so it is easier to control how fast the cream fluffs up. Also, if the kitchen is too hot, it will be more difficult to whisk and get the cream fluffy. In that case, chill it by placing the bowl with the frosting ingredients in the fridge for about 7-10 minutes. This will make it easier to whisk and obtain the right consistency.
