Tips
Save time and prepare the strawberry almond cake well in advance. Make the almond cake base and vanilla whipped cream frosting the day before, spread the frosting on the cake and cover it before placing it in the fridge until the next day. It will only make the cake better to let the frosting and cake base set. Add strawberries and decorate the cake with mint leaves just before serving.
Tips
Make sure you do not overmix the whipped cream frosting, or it will lose its shape and structure and get grainy. Whisk the mixture at medium speed, so it is easier to control how fast the cream fluffs up. Also, if the kitchen is too hot, it will be more difficult to whisk and get the cream fluffy. In that case, chill it by placing the bowl with the frosting ingredients in the fridge for about 7-10 minutes. This will make it easier to whisk and obtain the right consistency.
