Ingredients

100 g Butter
½ Packet of yeast
80 g Light muscovado sugar
1 tsp Ground cardamom
1 Egg
½ tsp Salt
450 g Wheat flour (save a little for baking)

Filling

75 g Butter (room temperature)
240 g Caster sugar
2 tbsp Ground cinnamon

For Brushing

1 Egg

Glaze

75 g Icing sugar
2½ tbsp Water
1 tsp Vanilla sugar

Instructions

Step 1

  • Put the yeast in a bowl. Melt the butter in a pan and add the milk, heat to a maximum of 37 °C. Pour the liquid over the yeast.

Step 2

  • Add the sugar, cardamom, egg, salt and most of the flour. Mix to a smooth dough and leave covered for about 30 minutes.

Step 3

  • Using an electric whisk mix the butter, sugar and cinnamon together to make the creamy filling.

Step 4

  • Grease a baking tray about 20x30 cm. Knead the dough on a lightly floured surface and roll out to a rectangle, about 50x30 cm.

Step 5

  • Spread the filling on the dough and roll up into a long roll. Cut the roll into 16 pieces. Put them on the baking tray with the cut surface upwards and leave to rise under a cloth for about 1-1 ½ hours.

Step 6

  • Heat the oven to 225 °C. Brush the buns with beaten egg and bake in the middle of the oven for 18-20 minutes.

Step 7

  • Mix the icing sugar, water and vanilla sugar to form a glaze and then swirl over the warm buns.

Sticky bun FAQs

What is the difference between sticky buns and caramel rolls?

Caramel rolls are similar to sticky buns and cinnamon rolls but have their own unique origins in the Midwest USA. While they share the same spiral shape, caramel rolls are typically topped with a rich caramel sauce rather than a sticky glaze made with brown sugar or honey.

Can you make sticky buns the night before?

Yes, you can mix and shape sticky buns and refrigerate them overnight before baking the next day. Just take them out of the fridge about an hour before you want to bake them. This allows the dough to rise a little more and ensures a soft, fluffy texture when baked.

What is the difference between a sticky bun and a honey bun?

Honey buns share the familiar pinwheel shape of sticky buns, but they use honey to form the glaze. The honey mixture is placed beneath the rolls before baking, then the whole tray is flipped after baking so the sticky, golden glaze ends up on top.

Sticky buns, cinnamon buns, and honey buns

Whether it’s sticky buns, cinnamon buns, or honey buns, these pinwheel-shaped pastries are beloved classics in the baking world. With their fluffy interiors and irresistibly gooey glaze, they make the perfect breakfast pastry or afternoon treat. They’re delicious with a warm drink in winter or iced coffee on sunny days. Try each variation and see which one is your favourite!

To flip or not to flip

One key difference between the different types of buns is whether they’re flipped after baking. Cinnamon rolls and sticky buns tend to be removed from the pan right-side up and then glazed. Honey buns and caramel rolls tend to be baked with their glaze at the bottom of the pan and then flipped so the glaze ends up on top.

How long do sticky buns last?

Store your baked sticky buns in an airtight container at room temperature and they should stay fresh for 2-3 days. To help them last a little longer, you can refrigerate them. Just be aware that this may firm up the texture slightly. You can gently reheat before serving though to bring back the softness.
