Ratatouille

Ratatouille is a delicious accompaniment for both poultry, fish or something completely different. Try this delicious, creamy ratatouille - it's quick to make!

Instructions

Step 1
  • Put the aubergine pieces in a bowl and sprinkle salt over them.
Step 2
  • Let them absorb the salt for approximately 10 minutes. Rinse the aubergine pieces and dry them with some kitchen paper.
Step 3
  • Let the butter melt in a sauté pan on intense heat without browning the butter.
Step 4
  • Mix onion and garlic for approximately 2 minutes.
Step 5
  • Add aubergine, squash and pepper and fry for approximately 5 minutes.
Step 6
  • Add chopped tomatoes, basil, thyme, salt and pepper and allow to cook under even heat for approximately 2 minutes.
Step 7
  • Add the crème fraîche, then warm the ratatouille through before tasting and serving.
