Lactose free no bake cheesecake

Try our Lactose free no bake cheesecake, using Arla LactoFREE soft cheese and refreshing raspberries, it is the perfect summer dessert.

Ingredients

150 g Rich tea biscuits
100 g Marshmallows, (Pink ones only)
½ tsp Vanilla essence
1 tbsp Icing sugar
150 g Fresh raspberries

Instructions

  • Place the biscuits in a plastic bag, seal and gently crush the biscuits with a rolling pin until you have fine crumbs. Tip out into a bowl and mix with the Arla LactoFREE Butter.
  • Spoon the biscuit crumbs into the base of 4 glasses or serving bowls pressing down with the back of a teaspoon.
  • Place 100g of the Arla LactoFREE Soft Cheese and the marshmallows in a microwave proof bowl and microwave together for 30 seconds. Or place in a saucepan and heat gently until just warmed through. Stir until they are well mixed and one texture.
  • Divide the mixed marshmallow mixture between the glasses over the top of the biscuit layer.
  • Place the remaining Arla LactoFREE Soft Cheese in a bowl and mix with the vanilla extract and the icing sugar until fully incorporated. Spoon or pipe over the top of the marshmallow mixture.
  • Place in the fridge to chill and set for 30 minutes or overnight. When ready to serve top with fresh raspberries.
