Lactose free kimchi toastie

Craving a tangy twist on a classic toastie? This Lactose Free Kimchi Toastie combines spicy kimchi with creamy, lactose-free cheese for a delicious, gut-friendly snack or quick meal. Perfect for anyone avoiding lactose but not willing to compromise on flavour!

Ingredients

2 slices Wholegrain bread
1 tbsp Sriracha chilli sauce
1 tsp Sesame seeds
75 g Kimchi ((roughly chopped)
½ Clove garlic (minced or finely grated)
½ Spring onion (finely chopped)
1 tbsp Fresh coriander (roughly chopped)
Salt and pepper

Instructions

  • Place a frying pan over a low heat. While this ​heats up, take your bread and drizzle the sriracha ​ sauce over one side of each slice. Next sprinkle ​over your sesame seeds and finally spread the ​ Arla LactoFREE spreadable on top.
  • In a medium bowl, mix together your ​remaining ingredients – the chopped kimchi, minced/grated garlic, chopped spring onion, ​ coriander and cheese. Season with a little salt ​and pepper.
  • Place one slice of bread, buttered side down onto a piece of greaseproof paper slightly larger than the bread. Top with the kimchi cheese mixture and finally, the remaining slice of bread buttered side up.
  • Transfer the sandwich on the grease-proof to the pan then carefully slide the grease-proof out and place on top of the sandwich (clean side up). Next, place an empty saucepan or plate on top to help press the sandwich down. This will help give a nice even cook and colour to the toastie.​
  • Cook for 3-4 minutes each side until the outside is golden and crunchy and the middle has heated up and the cheese melted. Serve immediately.​
