Gluten-free Pancakes

Try this recipe for gluten-free pancakes for delicious thin and crispy pancakes. Good with, for example, passion fruit and yogurt.

Ingredients

Pancake batter

60 g Corn flour
60 g Rice flour
60 g Potato flour
tsp Salt
400 ml Semi-skimmed milk
3 Eggs
2 tbsp Butter
Possibly icing sugar
200 g Turkish yogurt
2 Passion fruits

Instructions

Step 1

  • Whisk the dry ingredients and milk into a batter without lumps.

Step 2

  • Beat in the eggs and allow to rest for about 15 minutes. Melt the butter and stir into the batter.

Step 3

  • Fry thin pancakes. Roll up the pancakes and powder with icing sugar. Add yogurt with passion fruit and serve.
