Crème Brûlée with Strawberries

This Crème Brulée is not boiled, instead it is put in the fridge for a few hours. Serve with fresh strawberries. The recipe was created by Andreas Hedlund, Chef of the Year 2002.

Ingredients

Vanilla pods
300 ml Whipped cream
100 ml Semi-skimmed milk
60 g Caster sugar
4 Egg yolks
3 tbsp Raw Cane sugar

Instructions

Step 1

  • Cut the vanilla pod lengthwise and scrape out the seeds. Whisk together all the ingredients except raw cane sugar in a bowl. Leave covered in refrigerator for at least 1 hour but preferably overnight.

Step 2

  • Heat the oven to 100 °. Strain the mixture and pour it into dessert pots. Bake in the middle of the oven 50–60 minutes until they stop. Let it cool.

Step 3

  • Put the oven on the grill. Sprinkle raw cane sugar on the brulees and grill in the upper part of the oven with the oven door open for 1 minute or burn off with a burner.
