Instructions

Curry dressing:
  • Mix crème fraiche with the rest of the ingredients.
  • Place the covered dressing in the refrigerator until you are ready to eat.
Club sandwich with chicken and bacon:
  • Toast the bread – for instance, on a grill pan.
  • Place the slices of bacon in a cold pan and fry them – first for 2 minutes at high heat and after this at medium heat until they are golden and crispy. Let the bacon drain on a piece of paper towel.
  • Dry off the pan. Sear the chicken for about 1 minute on each side and cook it at medium heat for about 6 minutes on each side. Take the meat out of the pan and let it rest on a cutting board for a couple of minutes before slicing it.
  • Spread curry dressing onto the bread and fill the slices of bread with bacon, chicken, lettuce, tomato, and pickles.
  • Press the 4 sandwiches together and cut each sandwich into two. Stick a toothpick through each to secure them and eat the sandwiches immediately.

If you want to speed up the process of making homemade club sandwiches, you can cook the bacon in the oven while you prepare the dressing and vegetables, toast the bread, and cook the chicken on the stove. Oven-baked bacon is just as deliciously golden and crispy as bacon cooked in a pan.

When it comes to the bacon, first, make sure to buy some with a fairly high fat content, as this is what makes it crisp up nicely. In addition, to make it easier for yourself, prepare it in the oven. Preheat the oven to 200°C (regular oven). Place the bacon slices on a lined baking sheet and cook them for about 20 minutes in the middle of the oven. Baking bacon is incredibly easy as you do not need to babysit it or even flip the slices over – and you avoid the smoke and smell from frying bacon!
