Chicken and avocado salad

150 g Wholemeal pasta
5 g Butter
1 tsp Mild paprika
300 g Chicken breasts, skinless
½ Salt
200 g Broccoli
400 g Tinned green lentils, drained
250 g Edamame beans, thawed
150 g Fresh spinach
1 Large avocado, diced

Skyr dressing

1 tbsp Sweet chilli sauce
Salt (To taste)

Instructions

Chicken and avocado salad

  • Cook the pasta according to the instructions on the packet. Rinse under cold water and allow it to drain.
  • Melt the butter in a frying pan, add paprika, and fry the chicken for 5-6 minutes on each side, until cooked through. Season with salt, allow the chicken to cool slightly, then slice it.
  • Cut the broccoli into small florets, pour boiling water over them, and leave to stand for 2-3 minutes.
  • Arrange pasta, broccoli, lentils, edamame beans, spinach, and avocado on a large serving platter.
  • Place the sliced chicken on top of the salad.
