Bread sauce FAQs

How do you make a simple bread sauce?

Bread sauce is made by infusing milk with the flavour of onion, cloves, nutmeg, and bay leaf. The strained milk is then cooked and thickened with breadcrumbs to make a creamy sauce. You can also add cream or more milk at the end to get the consistency you want.

What is British bread sauce?

Bread sauce is a traditional sauce made with milk and breadcrumbs, a method dating back to medieval times. It’s usually served with turkey or chicken, and most often at Christmas.

Why do we have bread sauce at Christmas?

Bread sauce is a classic accompaniment to roast turkey and other poultry, and has probably been served alongside such meals for centuries. As Christmas is generally the only time people eat roast turkey in the UK, bread sauce has survived as part of this tradition.

What does bread sauce go well with?

Bread sauce goes perfectly with roast turkey, chicken, and goose, but works well with any type of game bird, like pheasant or grouse. It’s also delicious with sausages or other kinds of roast meat.

Bread sauce: a medieval classic

Bread sauce can be traced back to the Middle Ages when using breadcrumbs as a thickener for sauce was common practice, and a handy way to use up stale bread. While these days we often use flour or corn starch to thicken sauces, bread sauce has held out with its uniquely old-fashioned ways. Although you can now buy packet bread sauces, there’s really no comparison with the real thing.

What to serve with bread sauce

Bread sauce is unbeatable with roast turkey at Christmas, but it also goes well with plenty of other dishes. It’s so delicious, it’s good to have an excuse to make it throughout the year. Try it with roast pheasant, duck, or grouse for a sophisticated pairing. For something a bit more everyday, serving bread sauce alongside sausages is delicious, and makes an interesting alternative to gravy.

How to store homemade bread sauce

Bread sauce will keep in the fridge for a day or two, but will lose some of its creamy texture. However, this makes it great to spread on a sandwich of Christmas dinner leftovers. You can also make bread sauce a couple of days ahead of time and simply reheat it gently on the stove or in the microwave.
