250 g Spaghetti or another type of pasta
300 g Green asparagus
1 Small onion
200 ml Cooking cream
2 Eggs
100 g Parmesan cheese, freshly grated
20 g Butter
30 g Baby spinach
½ Organic lemon, zest, finely grated
1 handful Fresh basil
Freshly ground black pepper
Flaked salt, to taste

Instructions

  • Cook the spaghetti according to the packet instructions. Save some of the water for later.
  • Whisk the eggs with 75 g of the Parmesan in a bowl and season generously with freshly ground black pepper.
  • Cut the asparagus into bite-sized pieces and finely chop the onion.
  • Heat the spreadable butter in a large frying pan and cook the onion until soft and translucent.
  • Add the asparagus and cook for a further 2-4 minutes. Season lightly with flaked salt and freshly ground black pepper.
  • Pour in the cream and allow it to come up to a gentle simmer.
  • Add the hot spaghetti to the pan and remove it from the heat. This is important so the eggs do not scramble too quickly. Pour the egg and cheese mixture over the spaghetti, stirring continuously until the sauce turns creamy. Add a little pasta water if needed to adjust the consistency.
  • Fold the spinach into the warm spaghetti until just wilted. Adjust the seasoning with salt and pepper.
