Zesty Chicken Meatball Noodles

Meatballs are very popular. How about trying a new and refreshing recipe, where the meatballs are chicken and covered in lemon sauce. Accompany with a crisp cucumber salad with ginger and pea shoots.

Ingredients

Chicken Meatballs

400 g Minced chicken
3 tbsp Finely Chopped Top Of Spring white onions
1 pinch Coarse salt
1 pinch Pepper
1 Egg
50 ml Milk
60 g Oatmeal
1½ litre Water
1½ tsp Coarse salt
½ litre Milk Sauce
2 tbsp Freshly Squeezed lemon juice
½ tsp Coarse salt

Ginger and Cucumber Salad

500 g Small Pieces Of cucumbers
1½ tbsp Freshly ground ginger
2 tsp Cold Pressed Rapeseed. oil
1 pinch Coarse salt
200 g Pea shoots
7 Spring onions In Thin Rings
250 g Dried Whole Grain Noodles

Instructions

Step 1

  • Mix the minced chicken well with the spring onions and salt and pepper. Stir in the eggs and milk and then the oatmeal.

Step 2

  • Use to make approximately 16 meatballs, the size of large walnuts.

Step 32.

  • Boil the salted water in a saucepan and put in the meatballs.

Step 4

  • Cook them on an even heat for about 5 minutes, then drain the water from them and add the sauce, lemon juice and salt. Boil the sauce and stir gently.

Step 5

  • Meanwhile mix the cucumbers, ginger, oil and salt together. Taste and put the salad in a bowl and decorate with pea shoots.

Step 6

  • Cook the noodles according to the instructions on the packaging, drain them with a sieve and place them in a bowl.

Step 7

  • Sprinkle with spring onions and pour the meatballs and lemon sauce over the noodles.

Step 8

  • Serve immediately with the ginger and cucumber salad.

Topping Suggestions

Why not try garnish with finely chopped top of spring onions for some extra flavour.
