Vegetarian Goulash

Vegetarian Goulash

A delicious vegetarian goulash soup with a peppery taste, seasoned with garlic, chilli and cumin. Serve the soup with a mild and slightly acidic natural yogurt.

Ingredients

2 Yellow peppers
3 Potatoes
2 Garlic cloves
3 Pepper in Different Colours
5 g Butter
50 ml Tomato paste
1 tsp Ground cumin
1 tsp Chilli powder
1 litre Vegetable stock
10 g Chopped Fresh fresh parsley
200 g Arla® Skyr Natural yogurt

Instructions

Step 1

  • Peel the potatoes. Cut in half and slice. Peel and chop onions and garlic. Cut the peppers into pieces.

Step 2

  • Fry all vegetables in butter in a saucepan. Stir in tomato paste, cumin and chili. Pour in the stock and let the soup boil for 10-15 minutes.

Step 3

  • Whisk so that the soup becomes a little broken. Serve the soup with a hearty spoon of yogurt and sprinkle with parsley.
