Vanilla Rice Pudding

Ingredients

1⅕ litre Arla® B.o.b milk
140 g Risotto rice
1 tsp Nutmeg
1 Cinnamon stick
1 Vanilla pod
½ tsp Crushed ground cardamom Seeds
2 tbsp Raisins
50 g Caster sugar
½ tsp Cinnamon Powder

Instructions

Method

  • Allow to come to the boil and then simmer for thirty minutes until nearly all of your liquid is absorbed and the rice is beginning to look fluffy and cooked.
  • Add your raisins, your sugar and stir, ensuring the rice does not stick to the pan (if it does just add a splash of milk). Once sticky, remove the vanilla pod and cinnamon stick and serve.
  • Top with a sprinkle of cinnamon powder, additional raisins, chopped hazelnuts and enjoy!
