Thai Beef Curry

Spice it up with this Thai Beef Curry. Packed with flavour and only 114 cals per serving!

Ingredients

425 ml Coconut milk
500 g Minute steaks
3 tsp Salt
300 g Frozen peas
285 ml Arla® B.o.b milk
1 tbsp Thai fish sauce
1 Leek
2 tbsp Green curry paste
1 Lime (Zest and Juice)
3 tbsp Ground coriander
1 tbsp Colza oil

Instructions

Step 1

  • Cut the meat into strips.

Step 2

  • Heat the rapeseed oil in a large frying pan or wok, then brown the steak.

Step 3

  • Add the leeks and curry paste and fry until the leeks have softened.

Step 4

  • Stir in the coconut milk, Arla B.O.B milk, lime, peas, fish sauce and salt. Allow the sauce to boil for a few minutes until thick.

Step 5

  • Cook for 3 mins. When done, season with Coriander
