  • Preheat oven to 200°C (regular oven)
  • Mix all dry ingredients in a bowl.
  • Mix in water, melted butter, and quark.
  • Grease a springform pan (approx. 22 cm in diameter) and sprinkle with some of the sunflower seeds.
  • Transfer the dough to the springform pan and sprinkle with the rest of the sunflower seeds.
  • Bake the bread with sunflower seeds in the bottom of the oven for about 50 minutes.
  • Remove the sunflower seed bread from the springform pan and let it cool on a wire rack.

If you go with the cooking spray, make sure to choose a flavour-neutral non-stick cooking spray as it may otherwise add flavour to the bread. If you choose to use butter for greasing, there is no need to melt it first. Simply, use a stick of butter and rub it along the bottom and collar of the springform pan.


Sprinkling the butter-greased pan with flour and shaking excess flour off before transferring your dough to it is also an option. This old trick will prevent the sunflower seed bread from sticking to the pan and since you already have butter and flour on hand, it should be no bother.
