Instructions

Step 1
  • Mix flour, sugar, and baking powder. Whisk milk and strawberry skyr and then add it to the flour mix. Whisk until the mix is well blended.

  • Then add eggs one at a time and keep whisking until you have a smooth batter.
Step 3
  • Add a little butter to a pan and pour the dough into the pan. You can cook 3 pancakes at a time (depending on the size of your pan). Cook until golden and done at medium heat – approx. 4 minutes. This recipe makes approx. 25 pancakes.
To serve
  • 1. Roast the almonds in a dry, hot pan or the oven at 200C for about 5-6 minutes. Let them cool down and chop them roughly. 2. Cut the strawberries into bite-size pieces. 3. Arrange the pancakes with strawberry skyr, strawberries and almonds.
