Instructions

Step 1
  • Roast the hazelnuts on a dry and hot pan for 4-5 minutes. Let them cool off and rub off most of the skin. Chop them roughly.
Step 2
  • Roast oatmeal on a dry, hot pan for 1-2 minutes. Add butter, cocoa, honey, and salt. Roast for another 7-10 minutes or until the granola is golden and dry. Chop the chocolate. Lightly mix the chocolate and nuts with the cooled-down granola.
To serve
  • Arrange in bowls, top with granola and fresh berries and serve right away.

Tips

Our recipe will give you more granola than you need for a few servings of sour cherry skyr, but you can easily store the freshly made chocolate granola in a closed container for at least a week. Make sure it has cooled completely before adding chocolate and storing it in the airtight container.

Be careful when roasting the hazelnuts, as they can burn quickly, making them bitter. If you do happen to burn them, you can try to fix it by removing all the skin instead of just some of it. Boil and place them in an ice bath until you can carefully remove the skin. This should take away most of the burnt flavour.
