Stove-top Chowder

Summer is a lovely time of all our favourite veggies coming into season. Take advantage of the freshness with our delicious Stove-top Chowder recipe, made with creamy Cravendale milk

Ingredients

75 g Butter
200 g Streaky bacon cut into small chunks
1 White onion (diced)
3 Garlic cloves (minced)
1 Celery stick (chopped)
30 g Plain flour
1 litre Chicken stock
450 g Maris piper potatoes (cubed)
4 Corn on the cob with kernels removed
2 Bay leaves
1 tsp Smoked paprika
250 ml Arla Cravendale Semi-skimmed milk
2 tbsp Honey

To finish

Chives, finely chopped
50 g Extra mature Arla® LactoFREE Cheddar

Instructions

Step 1

  • Heat your butter in a large pot over a medium heat and add your bacon, onion, garlic and celery. Fry and stir every now and then for 10 mins.

Step 2

  • Add your flour to the pan and stir before slowly adding your stock whilst stirring to fully incorporate.

Step 3

  • Bring to the boil before adding your potatoes, corn kernels and bay leaves. Bring to the boil again and then simmer for 25 mins.

Step 4

  • Once the potatoes are soft, transfer them to a food processor and blitz until smooth before pouring them back into the pan and heating gently over a low heat.

Step 5

  • Add your paprika, Cravendale and honey and stir. Taste and season before finishing with Cheddar and chives and serving into bowls for a comforting yet summery dish that makes the most of fresh produce!

Tip

If you don't have corn-on-the-cob, frozen or canned corn drained will work just fine!
