Spring Rolls

Make these delicious Vietnamese spring rolls with soaked rice paper, which you can roll up and eat right away. Serve as an hors d'oeuvre with different dipping sauces.

Ingredients

50 g Glass Noodles
12 Sheets Of rice Paper
1 Carrot
1 Leek
Cucumbers
100 g Peeled prawns
2 tbsp Chopped Fresh ground coriander
100 ml Sour cream
1 tbsp Chinese soya sauce
1 Red chilli
1 Garlic clove
2 tbsp Caster sugar
50 ml Fish sauce
Pressed Juice From 2 Limes

Instructions

Step 1

  • Cook the glass noodles as directed on the packet. Rinse with cold water and allow to drain.

Step 2Step

  • Peel the carrot. Rinse the leeks. Cut the carrot, leek and cucumber.

Step 3

  • Soak the rice paper sheets one at a time for about 1 minute and place on a cutting board.

Step 4

  • Add glass noodles, vegetables, leeks, prawns and coriander. Roll up the rolls tightly and leave to cool.

Step 5

  • Mix the sour cream with soy. Seed and chop chilies. Press the garlic clove.

Step 6

  • Dissolve the sugar in the fish sauce and lime juice. Add chilli and garlic.

Step 7

  • Serve the spring rolls with the sauces.
