Quick Hollandaise Sauce

Instructions

Step 1
  • Mix together squeezed lemon, water and egg yolks in a saucepan.
Step 2
  • Whisk on a low heat until the sauce thickens and is about 66°. Remove the pan from the heat.
Step 3
  • Gently pour in the butter while constantly whisking. When all the butter has been whisked in, the sauce should be thick and glossy.
Step 4
  • Season with salt and cayenne pepper.
