Pepper Salsa

Pepper Salsa

A tasty salsa made with peppers and garlic. Suitable for most things on the grill, but especially good for sausages and pork.

Ingredients

1 Yellow onion
2 Red peppers
3 Garlic cloves
50 ml Spreadable butter
1 tsp Salt
1 pinch Coarse Ground black pepper
1 tsp Lemon juice

Instructions

  • Place the oven on grill, at about 250 °.
  • Cut and remove the seeds from the peppers. Peel the onions and garlic. Cut the onion into chunky slices and chop the garlic.
  • Add the peppers with the outer side up into an oven-proof dish together with the onion and garlic.
  • Drizzle the butter over and roast in the middle of the oven for about 20 minutes or until the pepper starts to char.
  • Put the peppers in a plastic bag and let them cool. Then pull off the skins. Mix the peppers, onions, garlic and butter from the tin into a smooth sauce using a food processor or with a blender.
  • Season with salt, pepper and lemon juice.

The finished Salsa can be stored for a week in the refrigerator. For alternative way of cooking, you can replace the peppers with 1 can of grilled peppers in oil. Reduce to 1 garlic clove and chop it finely with the onion. Remove the oil from the pepper and mix with onion and other ingredients.
