350 g Pasta (penne or rigatoni)
400 g Minced beef
1 Onion
2 Garlic cloves
1 can Chopped tomatoes (400 g)
2 tbsp Tomato purée
100 ml Beef stock
1 Oregano
1 tsp Dried basil
1 tsp Sugar
½ tsp Chilli flakes
100 g Mozzarella, grated
25 g Parmesan cheese, grated
Olive oil for frying
Salt
Freshly ground pepper

Instructions

  • Cook the pasta according to the packet instructions, but remove it 2 minutes before it is al dente (it will finish in the oven).
  • Finely chop onion and garlic.
  • Sauté the onion in olive oil in a deep pan until soft. Add garlic and cook for a couple of minutes.
  • Add beef and brown it well.
  • Stir in tomato purée and cook for 1 minute.
  • Add chopped tomatoes, beef stock, oregano, basil, sugar, and chilli flakes.
  • Let the sauce simmer for about 15 minutes, until thickened and creamy. Season the sauce to taste with salt and pepper.
  • Preheat the oven to 200 °C (conventional).
  • Add the pasta to the pot and toss to coat.
  • Transfer to an ovenproof dish and top with grated mozzarella and grated Parmesan.
  • Bake for about 20 minutes, until the cheese is melted and golden.
  • Serve with fresh basil.
