  • Drain yogurt in a clean tea towel for 1.5 hours to reach a thick and creamy consistency. Collect the liquid that separates.
  • Line a 24 cm diameter springform tin with baking paper on the bottom and secure the rim.
  • Crush biscuits in a food processor.
  • Melt butter in a saucepan and mix in the biscuit crumbs.
  • Spread the mixture evenly over the bottom of the springform tin and press it down using the rounded side of a spoon. Place the springform tin in the fridge for 10 minutes.
  • Soak gelatine in plenty of cold water.
  • Clean strawberries, remove the stems, and cut them in half. Arrange the halved strawberries with the flat side against the edge of the springform tin and spread the remaining strawberries over the bottom.
  • Heat 100 ml of the collected liquid from the yogurt (do not bring it to a boil) and dissolve the squeezed-out gelatine sheets in it, one at a time.
  • Add sugar to the mixture and stir until dissolved. Allow this mixture to cool to room temperature.
  • Once cooled, stir in the yogurt and vanilla extract, ensuring there are no lumps.
  • Pour the yogurt mixture into the springform tin and smooth it out. Allow the cake to set in the fridge for a few hours.
  • Finally, decorate the cake with berries.

Once you have assembled your cake, it is time to chill it. Place it in the fridge for several hours or overnight to set it properly. During this time, it firms up and the flavours meld together, creating a harmonious experience. So, resist the temptation to dig in right away and let it chill to perfection.

What is yogurt cake?
Imagine a cake that does not require any baking, that is the beauty of a yogurt cake. It sets in the fridge, making it incredibly convenient and easy to prepare. It is the perfect option when you want a hassle-free treat that can be made in advance. The key to the filling of a yogurt cake is, of course, the dairy product. This star ingredient gives it a smooth and creamy texture that is simply irresistible.
How to ensure the texture of yogurt cake?
To achieve the ultimate creamy consistency, carefully drain the excess liquid from the yogurt. Place it in a strainer/colander lined with a clean tea towel or cheesecloth. Place it over a bowl or plate to drain. Removing the excess liquid results in a denser texture that makes each bite of the cake a creamy delight.
Can lactose-free yogurt cake be frozen?
Yes, but freezing may cause slight changes in texture. Proper packaging is key to prevent this, so make sure to tightly wrap it in plastic wrap or foil or place it in an airtight container. When you are ready to enjoy it, thaw it gradually in the fridge to preserve its texture and flavour.
