Instructions

  • Drain yogurt in a clean tea towel for 1.5 hours to reach a thick and creamy consistency. Collect the liquid that separates.
  • Line a 24 cm diameter springform tin with baking paper on the bottom and secure the rim.
  • Crush biscuits in a food processor.
  • Melt butter in a saucepan and mix in the biscuit crumbs.
  • Spread the mixture evenly over the bottom of the springform tin and press it down using the rounded side of a spoon. Place the springform tin in the fridge for 10 minutes.
  • Soak gelatine in plenty of cold water.
  • Clean strawberries, remove the stems, and cut them in half. Arrange the halved strawberries with the flat side against the edge of the springform tin and spread the remaining strawberries over the bottom.
  • Heat 100 ml of the collected liquid from the yogurt (do not bring it to a boil) and dissolve the squeezed-out gelatine sheets in it, one at a time.
  • Add sugar to the mixture and stir until dissolved. Allow this mixture to cool to room temperature.
  • Once cooled, stir in the yogurt and vanilla extract, ensuring there are no lumps.
  • Pour the yogurt mixture into the springform tin and smooth it out. Allow the cake to set in the fridge for a few hours.
  • Finally, decorate the cake with berries.
