You do not have to sacrifice flavour or texture when making a lactose-free version.

  • Preheat the oven to 225°C (regular oven).
  • Peel and chop onions and garlic cloves. Fry in butter in a frying pan until soft.
  • Add minced meat and stir until it crumbles.
  • Add diced tomatoes, tomato paste, oregano, pepper, and stock cube. Let the sauce boil for about 5 minutes.
  • Whisk flour into half of the milk in a saucepan.
  • Pour in the rest of the milk and bring to a boil while whisking. Let the sauce boil for about 3 minutes.
  • Stir in 250g of cheese and season with salt.
  • Layer minced meat sauce, cheese sauce, and lasagne sheets in a greased oven-proof dish. Finish with sauce. Sprinkle the rest of the cheese on top.
  • Bake the lactose-free lasagne in the lower part of the oven for about 30 minutes.

Take your time to layer the lasagne sauces evenly and make sure to spread the meat sauce and white sauce to the edges to prevent the lasagne sheets from drying out when baked. This way you get the lovely tender texture.

It is also important to let the lactose-free lasagne rest for at least 10-15 minutes after taking it out of the oven. This allows the flavours to meld together perfectly. It also makes it easier to cut into neat slices and prevents eager eaters from burning themselves on the very hot dish.

Can you freeze lactose-free lasagne?
Yes, you can freeze lactose-free lasagne. The key is to allow it to cool completely before freezing it. Once it has cooled, wrap it tightly in plastic wrap or aluminium foil and place it in an airtight container or freezer bag. When properly stored, you can freeze it for up to 3 months. When you are ready to eat it, let it thaw overnight in the fridge and then reheat it in the oven until it is hot and bubbly. You can also freeze your uncooked lactose-free lasagne.
