King Prawn Curry

King Prawn Curry

A spicy curry with peaches and coconut milk, served with a tasty rice and lime.

Ingredients

25 g Butter
160 g Loose rice (parboiled)
½ Coarsely Chopped red pepper
2½ tsp Finely Chopped Green chilli peppers
1 Roughly Grated White white onion
2 Small Crushed garlic cloves
1 tsp Garam masala
½ tsp Madras curry powder
150 g Canned peaches
165 ml Light coconut milk
1 tbsp Freshly Squeezed lime juice
500 g Thawed Frozen prawns
½ tsp Sea salt
1 Lime fruit

Instructions

Step 1

  • Cook the rice as per the instructions on the packet. Melt 10g butter in a pan and cook the chopped red pepper and then 0.5 tsp of the green chilli pepper for approximately ½ minute. Mix the rice, pepper and chilli together.

Step 2

  • Melt 15g butter in a pan and saute the onion, garlic, the rest of the green chilli pepper, garam masala and curry powder for about 1 minute. Add the drained peaches, coconut milk and lime juice. Let the mixture boil without a lid for about 1½ minutes.

Step 3

  • Add the prawns, stirring them well into the curry sauce and cook through. Taste. Serve with the spicy rice and lime wedges.
