Creamy Egg Salad

Egg salad is a nice alternative when you get tired of egg halves on herring. Egg salad is easy to make and great to share.

Ingredients

4 Extra Large eggs
50 ml Creme fraiche
tbsp Dijon mustard
2 pinches Salt
2½ tbsp Finely Chopped Fresh chives
100 g Peeled prawns

Instructions

Step 1

  • Cook the eggs and let them cool. Cut off the top of the eggs with a sharp knife.

Step 2

  • Carefully remove the insides but make sure the egg shell doesn't break.

Step 3

  • Chop the eggs and mix with crème fraîche, mustard, salt and most of the chives.

Step 4

  • Put the egg mixture back in the shells. Top with prawns, roe and chives.
