Ingredients

600 g Courgette Preferably Yellow & Green
1 White onion
10 g Butter
600 ml Semi-skimmed milk
2 Vegetable stock Cubes
20 g Chopped Fresh chives
Salt & pepper
75 g Extra Mature Arla® LactoFREE Cheddar
150 ml Bechamel sauce

Instructions

Step 1

  • Cut the courgettes into slices and then into pieces. Peel and chop the onion.

Step 2

  • Fry the onion in butter in a pan. Add the courgettes, milk and stock.

Step 3

  • Let the soup boil for about 10 minutes. Flavour with chives, salt and pepper.

Step 4

  • Grate cheese. Whip the cream. Mix the cream and cheese. Stir the cream in the soup and serve.
