Chocolate cheesecake is a dream come true for all chocolate lovers. Made with sweet milk chocolate, tangy quark, and soft cream cheese and served with fresh raspberries and homemade raspberry sauce, it is a dessert you simply must try.   • Preheat the oven to 175°C (conventional oven).
  • Crush or finely blend biscuits. Melt butter and stir in the biscuit crumbs.
  • Press the biscuit mixture into the bottom of a springform pan, approx. 26 cm in diameter. Bake in the middle of the oven for about 7 minutes.
  • Whisk quark, cream cheese, icing sugar, and eggs into a smooth batter.
  • Break the chocolate into pieces and melt it in the microwave or over a water bath.
  • Take about 100 ml of the batter and whisk it vigorously into the melted chocolate. Continue in the same manner with the rest of the batter until it is well combined.
  • Pour the chocolate mixture into the pan and bake for an additional 35-40 minutes.
  • Turn off the oven, but leave the cake inside for about 20 minutes with the door ajar to avoid cracking.
  • Allow the cake to cool completely before serving.
Raspberry sauce
  • Place raspberries and icing sugar in a small pot and bring it to a quick boil for 1-2 minutes.
  • Blend it, pass it through a sieve, and let it cool for at least two hours.
To serve
  • Garnish the cake with raspberries and mint leaves, if desired.

You do not want to overmix the batter, as this might lead to cracks. So, to get a smooth texture without too much mixing, ensure cream cheese, eggs, and quark are at room temperature before mixing.


If you have tried making baked cheesecakes before and they always end up cracking, try a water bath. Place the springform pan with the cheesecake inside, wrapped thoroughly in at least one layer of foil, inside a larger pan filled with hot water. This helps distribute the heat more evenly and minimises the temperature fluctuations that can cause cracks.

Add your own touch
