Brain Boosting Banana Muffins

The no-excuse to miss breakfast kind of muffin - portable and delicious! Packed with protein and fibre, these muffins are perfect to sustain energy throughout the day.

Ingredients

1½ tsp Baking powder
240 g Wholemeal flour
1 tsp Baking soda
2 tsp Ground cinnamon
½ tsp Sea salt
1 tsp Nutmeg (Ground)
2 Large eggs
Bananas (Mashed)
75 ml Arla Cravendale Semi-skimmed milk
5 tbsp Olive oil
10 tbsp Pure maple syrup
1½ tsp Vanilla essence
130 g Carrots (Freshly Grated)
2 tbsp Peanut butter (Smooth)

For Decoration (Optional)

Peanut butter (Smooth)
Bananas
Strawberries
Blueberries
Almond flakes

Instructions

Step 1

  • Preheat the oven to 180 C/160C fan/gas 4 and line a 12 cup muffin tin with cases.

Step 2

  • In a large bowl combine all dry ingredients.

Step 3

  • In another bowl whisk together all wet ingredients (bar carrot) until well combined.

Step 4

  • Combine the wet and dry ingredients and then gently fold in the carrot.

Step 5

  • Distribute the mixture evenly across your muffin tin and bake for 20-25 minutes.

Step 6

  • Check cooked through by pricking with a toothpick or skewer. If clean when removed they are ready!

Step 7

  • Allow to cool for 15 minutes and then get decorating.

Step 8

  • Place a heaped teaspoon of peanut butter on top of each muffin and evenly spread across the surface.

Step 9

  • Create fun faces and animals by arranging fresh fruit and veg and pressing into the peanut butter. Who said healthy was boring? the perfect mid-week brekkie to grab and go!
