Birthday Cake

Birthday cake should be something special - here it takes the form of a chocolate cake with soft vanilla cream and fresh strawberries.

Ingredients

Chocolate Bundle

300 g Sugar
125 g Soft butter In Smaller Pieces
tsp Coarse salt
2 Eggs
300 g Wheat flour
4 tbsp Cocoa powder
1 tsp Baking soda
250 ml Buttermilk
1 tbsp White wine vinegar

Vanilla Cream

2 Vanilla pods
3 tbsp Icing sugar
600 ml Creme fraiche (30%)
100 g Coarsely Chopped dark chocolate (About 55%)
500 g Fresh strawberries
1 Edible Flower Or lemon balm Leaves

Instructions

Step 1

  • Whip sugar, butter and salt with a hand mixer until it is light and airy. Beat the eggs in.

Step 2

  • Mix flour, cocoa and baking soda and then stir in egg mixture.

Step 3

  • Add buttermilk and white wine vinegar and stir well.

Step 4

  • Heat the oven to 175 °. Put a piece of baking paper between the ring and the bottom of a spring-based tin (approximately 22 cm in diameter) - butter the sides. Spread the mixture evenly into the tin and place in the middle of the oven to cook for about 50 minutes. Leave to cool completely on a baking rack.

Step 5

  • Remove the cake from the tin and remove the baking paper. Divide the cake into three with a bread knife so you get three identical, flat cake bases.

Step 6

  • Separate the vanilla pods, scrape out the vanilla seeds and mix them with a little icing sugar.

Step 7

  • Put it in a bowl with the remaining icing sugar and crème fraîche. Beat the mixture until thick and creamy and then fold in the chocolate. Taste.

Step 8

  • Rinse the strawberries and cut them in half or quarters - depending on size.

Step 9

  • Layer each of the chocolate bases with vanilla cream and strawberries - finish with extra strawberries.

Step 10

  • Decorate with strawberries, edible flowers or lemon balm and birthday flags.
