Belgian Waffles

Belgian waffles are originally from Brussels and are perfect for a luxurious brunch or dessert. Serve with fresh berries and whipped cream.

Instructions

Step 1
  • Melt the butter in a saucepan. Add milk and water. Warm to max 37 °. Crumble the yeast into a bowl and pour over the butter mixture.
Step 2
  • Divide the eggs into yolks (save the whites in a bowl) and add the egg yolks, salt, sugar, vanilla sugar and flour. Stir together into a smooth batter.
Step 3
  • Beat the egg whites into a stiff peaks and fold into the batter. Let rest for about 20 minutes.
Step 4
  • Heat a Belgian waffle iron and brush with butter. Bake the waffles in batches." .
