Banana pancakes
  • Put eggs, half the oats, Skyr, banana, baking powder and salt in a blender.
  • Let a bit of the butter become golden in a pan (approx. 22 cm in diameter). Bake 3 small pancakes (approx. ½ dl batter per pancake) at medium heat for 2 minutes on each side or until golden.
  • Keep the pancakes warm under foil and repeat with the rest of the butter and batter.
  • Mix Skyr, ⅔ of the berries and vanilla sugar in a bowl and mash it lightly with a fork.
  • Decorate the warm pancakes with Skyr cream, honey, and the last berries. Serve immediately.

The bananas add sweetness to the pancakes. Thus, you should use ripe bananas that are soft to the touch and have brown spots on the peel. If you want your banana pancakes to be a little less sweet, simply use less ripe bananas. You can ripen the bananas faster by microwaving them at 10-15 seconds intervals until they soften. Just remember to let them cool before adding the bananas to the rest of the ingredients. If you prefer a less smooth texture to the pancakes, skip the blending and use a fork to mash and mix all the ingredients. The secret to light and fluffy pancakes is letting your pan heat up slowly. This will make it easier to control the temperature, and you do not have to adjust the heat constantly. Instead of making regular big banana pancakes, try making tiny ones. This will prevent them from sticking together. Transfer the pancakes to an airtight container or sealable freezer bag and put them in the freezer. They will keep well for up to 3 months if stored properly. When you are ready to enjoy the pancakes, thaw them in the fridge for a few hours or overnight or defrost them in the microwave on low power. Be careful not to heat them too long, or you will mess up the texture.
Can you freeze banana pancake batter?
To always be ready to make these sweet and delicious banana pancakes, make the batter and freeze it. Mix all the ingredients for the banana pancake batter and pour the batter into a freezer bag and allow some room for the mixture to expand when frozen. Freeze for up 1-2 months. Thaw the batter by placing the freezer bag in the fridge overnight. Alternatively, let it defrost under cold water; it will, however, take longer to defrost it that way.
