400 g Ziti pasta or another tube-shaped pasta
1 tbsp Olive oil
450 g Minced beef
1 Onion
3 Garlic cloves
1 tsp Dried oregano
1 tsp Dried thyme
½ tsp Dried rosemary
½ tsp Dried basil
½ tsp Chilli flakes
2 cans Chopped tomatoes (800 g)
140 g Tomato purée
1 tsp Sugar
1 tsp Salt
Freshly ground black pepper

Cheese mixture

250 g Ricotta
20 g Parmesan cheese, grated
1 Egg

Topping

100 g Mozzarella, grated
15 g Parmesan cheese, grated
Fresh basil

Instructions

Pasta and meat sauce

  • Cook the pasta according to instructions on the packet, but remove it from the water 2 minutes before it reaches al dente (it will finish cooking in the oven).
  • Finely chop onion and garlic.
  • Heat oil in a large pan. Sauté onions until soft and translucent. Add garlic and cook for a couple of minutes.
  • Add minced beef and brown it well.
  • Stir in tomato purée, chopped tomatoes, sugar, rosemary, thyme, basil, chilli flakes, and oregano.
  • Season with salt and pepper and let the sauce simmer for about 20 minutes. Adjust seasoning to taste.

Cheese mixture

  • Preheat the oven to 175 °C (fan-assisted oven).
  • Make the cheese mixture by stirring together ricotta, Parmesan, and egg in a bowl. Season with salt and pepper.

Assembling

  • In an ovenproof dish (about 20 × 30 cm), spread half of the pasta, followed by half of the meat sauce. Mix gently.
  • Spoon dollops of the cheese mixture on top, then add the remaining pasta and meat sauce.
  • Finish with grated mozzarella and Parmesan, and bake for about 25 minutes, until the cheese is golden.
  • Remove the dish from the oven and leave it to rest for 10 minutes before serving, so it can set.
  • Serve with fresh basil on top.
