Baked Aubergines

Baked Aubergines

A lovely and filling vegetable dish that can be enjoyed with bread as a side.

Ingredients

2 Small aubergines
1½ tbsp Olive oil
200 ml Creme fraiche
100 g Breadcrumbs
1 Small egg
1 Garlic clove
2 g Salt
1 g Black pepper
75 g Extra Mature Arla® LactoFREE Cheddar
20 g Finely Chopped fresh herbs

Instructions

Step 1

  • Heat the oven to 175 °.

Step 2

  • Cut the aubergines lengthways and scoop them out with a spoon. Mince the removed aubergine and place it in a bowl.

Step 3

  • Brush the aubergine halves inside with a little of the olive oil and place them in an ovenproof dish. Cook in the middle of the oven for about 15 minutes.

Step 4

  • Mix the aubergine meat, the rest of the olive oil, crème fraîche, breadcrumbs, eggs, garlic, salt and pepper.

Step 5

  • Grate the cheese. Stir in half of the cheese with the aubergine. Distribute the filling into the aubergine halves.

Step 6

  • Mix the herbs with the remaining cheese and sprinkle with the aubergines. Cook in the oven for about 25 minutes.
