Apple Crumble

Classic Apple Crumble - an irresistible dessert to serve with homemade custard, cream with a little vanilla sugar in or in the froth with hints vanilla flavour.


Step 1
  • Heat the oven to 225 °.
Step 2
  • Mix flour and sugar in a bowl. Mix in butter (in pieces) until a gritty texture is formed.
Step 3
  • Peel, deseed and slice the apples into thin slices and mix with sugar and cinnamon in an ovenproof dish. Spread the butter mixture over the filling.
Step 4
  • Bake in the middle of the oven 15-20 minutes.
Step 5
  • Cut the vanilla pod lengthwise and scrape the seeds into a saucepan. Add the vanilla pod. Add milk and 1 cup of cream. Cook on a medium heat. Take off the heat and leave for 10-15 minutes.
Step 6
  • Pick out the vanilla pod.
Step 7
  • Beat egg yolks, sugar and potato flour. Heat the sauce to medium heat while stirring until it begins to thicken.
Step 8
  • Pour the sauce into a bowl and whisk it cold.
Step 9
  • Add in the rest of the cream, stirring it into the cold custard.
