Our apple and carrot muffins are delightfully moist and flavoursome, perfect for dessert, brunch, a snack, or breakfast with a layer of cold butter.   • Preheat the oven to 225°C (conventional oven).
  • Core and chop the apple. Peel and finely grate the carrot.
  • Whisk eggs and cane sugar until light and airy. Add apple, carrot, yogurt, and butter & rapeseed oil.
  • Mix the dry ingredients and stir them into the batter.
  • Divide the batter into a greased muffin tin or large muffin cases.
  • Bake in the middle of the oven for 15–17 minutes.
  • Enjoy fresh from the oven with a bit of butter.

The muffins keep well in an airtight container at room temperature for 2-3 days or in the fridge for 5-7 days.


To keep them longer, store them in the fridge. We recommend wrapping each muffin in cling film. If you place them all in the same freezer-safe bag or container they might freeze together and become difficult to separate without thawing the entire batch. Thaw at room temperature when ready to enjoy.
