2 tbsp Butter
40 g Dark muscovado sugar
1 tbsp Paprika powder
1 tbsp Ground cumin
2 Garlic cloves
1 tsp Salt

Instructions

Ribs

  • Parboil the ribs in lightly salted water for 10 minutes. Pat the meat dry with kitchen paper.
  • Mix apple juice, butter & rapeseed oil, sugar, paprika, cumin, salt, and finely grated garlic in a bowl.
  • Turn the ribs in the marinade. For extra flavour, refrigerate for 1–2 hours.
  • Place the ribs in the air fryer basket. Air-fry at 180 °C for 25–30 minutes, turning halfway through.
  • Check that the meat is fully cooked; the internal temperature should be about 70 °C.

Potato wedges

  • Preheat the oven to 225 °C (200 °C fan-assisted).
  • Wash the potatoes and cut them into wedges. Place on a baking tray lined with baking paper. Toss with the oil, salt, and pepper.
  • Bake in the middle of the oven for 25–30 minutes, or until golden and cooked through.

Coleslaw

  • Finely shred the cabbage. Peel and grate the carrot. Mix with the crème fraiche, Dijon mustard, and salt.
